Pitted Black Nicoise Olives

These tiny, flavorful dark purple olives are traditionally served with Salade Nicoise, with sandwiches and in many other salads. Great, too in stews, soups and sauces, where the wine-flavor of these rich tiny olives can be appreciated. Fresh, unpasteurized olives are not "cooked" leaving the olives with the best possible texture and flavor. They have a bright, natural color of the fresh fruit, with a firm, crunchy bite, and bold fresh olive flavor. From Fontvieille, in the heart of France’s beautiful Provence the Arnaud family has been curing and packing their Provençal olives for three generations. Natural curing with sea salt and water only; seasoned with locally grown Provençal herbs, sunflower oil, cracked pepper, fresh garlic and other seasonings. Arnaud olives are picked from olive trees and “cured” over months while they soak in water and sea salt brine. This process takes away the bitter taste of the olive and replaces it with the delicious flavor tasted in these retail jars. Mass produced olives are artificially colored and cured with a high percentage of chemicals. The artisan curing process that the Arnaud family has practiced for three generations leaves these olives with delicious all natural flavors.
